Here's another area of drastic change. Before this year we used a LOT of olive oil and butter, plus at least a gallon of canola oil each year. Honestly, I'm nervous about not having enough fat. We have more animals to butcher, but here's what we have stored so far:

  • 7+ pints beef tallow
  • 1-2 qt. lard
  • 1 gallon goat fat
  • 6 gallons sunflower seeds for oil
  • walnuts (300 lbs. in the shell) for oil
  • pecans (2 lbs. in the shell) - also for oil
  • 1 gallon shelled hickory nuts for hickory nut butter
  • 2-3 qts lotus seeds/nuts for oil
