Here's another area of drastic change. Before this year we used a LOT of olive oil and butter, plus at least a gallon of canola oil each year. Honestly, I'm nervous about not having enough fat. We have more animals to butcher, but here's what we have stored so far:
7+ pints beef tallow
1-2 qt. lard
1 gallon goat fat
6 gallons sunflower seeds for oil
walnuts (300 lbs. in the shell) for oil
pecans (2 lbs. in the shell) - also for oil
1 gallon shelled hickory nuts for hickory nut butter
