When the zombie apocalypse hits, you don't want to be stuck eating MREs day after day, do ya?  And what happens when they run out?  Or if you get a hankering for something that's not in one of those little vacuum sealed envelopes?

Here's everything you need (and need to know) to make a delicious 100%-homemade blueberry cheesecake:

Zombie Apocalypse Blueberry Cheesecake

Ingredients:

CRUST:

1.5 cups sorghum (milo) flour (you can use wheat, but sorghum, ground just barely coarse, makes a terrific and far superior graham cracker crumb substitute)

1/3 cup beef tallow, melted (again, you could use lard or even goat tallow, but beef fat has the most neutral flavor, and solid fats lend a better texture in the finished crust than oil)

3 Tbsp. honey

Mix all ingredients together until you have a smooth, stiff batter.  Press into a 9" pie pan.  A straight-sided pan is preferred and will accommodate more filling.

CHEESECAKE FILLING

16-24 oz plain salted chevre (soft goat cheese - trust me, this will come out great)

3 eggs

1/2 - 2/3 cup honey

1.5 tsp sweet yellow clover extract (optional)

Beat room temperature plain chevre and (lightly warmed) honey together until smooth.  Add eggs and beat gently until well mixed.  Stir in yellow sweet clover extract.  Pour into crust and bake for for 50-60 minutes in a water bath (I put my straight-backed pie pan on a deep cookie sheet with water in that).  Cool for at least an hour or two.

BLUEBERRY (or strawberry) TOPPING

2 cups fresh or frozen berries

1 Tbsp. water

1/4 cup honey

1.5 Tbsp flour (wheat flour makes a good thickener, so does sorghum flour or acorn starch if you've saved any - I'll get into that on a different post, maybe...)

1 Tbsp strong za'atar tea, optional (in lieu of lemon juice; can also use a bit of apple cider vinegar)

Mix water, a thawed za'atar tea cube (or fresh tea, cooled) and flour.  Set aside.  Warm berries and honey until juices begin to release.  Add flour-water mixture, and heat until the mixture starts to thicken.  Spread topping over the cheesecake when the cheesecake is cooled and ready to eat.
